This program exists to assure wholesome products for consumers and is considered “equal to” the Federal Meat Inspection program. In 2014 there were
two State harvesting plants, 10 State harvesting and processing plants, seven State processing only plants, with one Talmadge Aiken (T/A) harvesting plant, fi ve T/A harvesting and processing plants and 8 T/A processing only plants for a total of 33 official plants. There were also 38 custom exempt plants and 32 Farm Custom Slaughter permittee’s (Tri-Pod mobile Harvesting rigs) for an overall total of 103 establishments throughout Utah.
